From sourdough to bread
The Boulangerie du Louvre opens its doors under the glass Pyramid designed by Ieoh Ming Pei. This bakery, the first of its kind in a major museum, is run by head bakers Pascal
Rigo and Arnaud Chevalier. Equipped with a full bakery workshop, the Louvre Bakery has chosen to work with natural fermentation and an ancient sourdough. The Pain du Louvre is prepared, kneaded, proofed, and baked on-site—right behind glass windows that allow visitors to witness the entire process.
Authentic Flavor, Inspired by the Louvre
The Louvre Bakery menu is a celebration of indulgence, tradition, ingredient quality, and sustainability.
Created as a tribute to the museum, the Pain du Louvre is the flagship product of the new bakery. It features a flour-dusted pyramid design, exceptional sourdough, and organic T65 flour from artisan miller Les Moulins Fouché.

An architectural challenge
Designed by architects Margaux Lhermitte and Corentin Nicolas from CB’a Design, the bakery’s layout and workshop were a technical challenge. Open to the Pyramid and visible from outside, the bakery offers a daily display of traditional French baking techniques: shaping dough straight from the mixer, scoring and flouring loaves, cutting croissants, and more.
